Hi, friends! Thanks for joining us again! Today, we're talking about cookies -- double chocolate shortbread Scottie Dog cookies. Do we have your attention now? :)
Have you ever tasted these cookies, or seen them on a store shelf? Mike and I first sampled the original flavored cookies from a holiday gift basket from my parents. The cookies are thick, rich and perfect with coffee. But these double chocolate cookies takes the flavor even further with both a chocolate shortbread dough and chocolate chips folded in. Sounds amazing, right? It wasn't enough for us...
We turned double chocolate cookies into triple chocolate cookies by making Scottie Dog cookie sandwiches (which you could probably assemble with your eyes closed).
Triple Chocolate Scottie Dog Cookie Sandwiches
Yields 4 cookie sandwiches
1 box of Chocolate Scottie Dogs Shortbread (made in Scotland!)
1 tub (or approximately 1/4 cup) of your favorite chocolate frosting
Enough sprinkles to liberally decorate
Begin by laying eight cookies out; generously frost half of the cookies. Smooth the frosting to the edges of each cookie and then partner with an unfrosted cookie to create a sandwich. Gently squeeze each sandwich together so that frosting slightly overflows past the edges.
Add sprinkles around the edges and then, if necessary, pop the sandwiches into the fridge for a few minutes or more to help the frosting set.
We made this batch of cookie sandwiches just for fun (and to feed my inner chocolate monster), but based on how easy they are to assemble, these would be a breeze to gift or to customize for a party or holiday (red, white and blue sprinkles for Independence Day?).
