Last Friday, we walked to our neighborhood Farmer's Market for opening day. The weather was beautiful and to walk among our favorite vendors again was like seeing old friends (except that they don't know we're friends :) Our usual strategy in the market is a leisurely first lap, stopping for samples or to buy a fresh cranberry lime lemonade. We might pick up cheese curds or homemade pickles, rum cake balls or homemade dog jerky. Then we'll make another few rounds as we enjoy our treats and continue to explore. Last time, the fresh produce looked especially appealing. But with a hot puppy, we decided to head home before taking a closer look.
Inspired by the produce at the Farmer's Market, the next day, I went grocery shopping and loaded up on fruits and veggies, including these bell peppers. And with one of every color, I decided that everyone should get their own. Here's how I prepared them, two ways...
For Mike and I, I winged some sort of casserole stuffed peppers with Southwest flavors. First, I sauteed onions and garlic. I threw in a handful of shredded potatoes and added a few sliced adobo peppers towards the end. Outside of the pan, I beat together three eggs with a little milk, salt and pepper. Then I combined everything (the potato mixture and eggs) and poured it into two hollowed bell peppers. I threw a little shredded cheese at the tops and popped them into a 375 degree oven for about 35 minutes. Then I got fancy and plated the peppers in a little lake of green enchilada sauce, with a drizzle of adobo sauce and topped the peppers with a dollop of sour cream and some chopped cilantro!
Did you know that a moderate amount of bell pepper is generally safe for dogs? We had never offered a bell pepper to Pierogi before, so I simply diced the third pepper into a few strips to start.
As with every new treat, he took his time to sniff out the peppers.
He finally went for one, because he believes that you should try everything once, and he loved it! He went on to devour the rest of the plate...
...and convinced me to give him a few more!
